What's going on the dinner table tonight? I want to know!
I'm making a favorite of mine--Confetti Meatloaf from Julia Turshen's cookbook Now & Again. It uses ricotta instead of eggs and breadcrumbs to bind it. I'm making the ricotta from scratch because, well, ME. To go with it I'm making mashed cauliflower and having leftover balsamic-marinated cucumbers. It will be a low-carb meal here tonight.

Sounds like a delicious dinner. Too bad I don't live in New Jersey and I cannot afford to hire anyone but if I could I would hire you as my cook, You could still do your own things and go to work but just make my meals for an arranged salary. Anyway, I had chicken nuggets and mashed potatoes,

I made a salad with romaine, tomatos, cukes, some red onion, and thises and thats...made an extra chicken thigh last night so I cut that up and had it on my salad. It was delicious.
