Half of a delicious dinner.

I put 2 artichokes to boil while I took a nap. I prefer to simmer artichokes in a normal pot filled with water although most people i know prefer a pressure cooker.
I just ate one of them with homemade mayo. I´ll leave the other to eat when I am really hungry.
The supermarket is selling artichokes at a very high price but the are are clean, fresh and new. So, as I only eat them once in a while while in season and I don´t share them with anyone, I buy them once in each month.
What will you have for dinner today, friends?

I still have spaghetti left over from last night. I'll probably just heat that up for dinner tonight. I don't really feel like cooking.

The artichokes cooked without my having to watch them. And I had made thge mayo 2 days ago.

Those are one of the few veggies that I buy clean and with their skin off.

I love artichokes, especially when it is made like a dip. But with butter is also fine. The problem is, I don't know how to prepare or coke them fresh, so I always just get the canned ones.
For dinner, I sauteed ground chicken with diced potatoes and baby bok choy. We ate it with turmeric rice.

I just boil the whole artichokes is salted water. They are done in 40 minutes in a regular pot. You caan scrape the meat to make a dip but I like to eat them leaf by leaf with my fingers. I dip them in home made mayo.

I made a big fresh salad because I have a lot of fresh garden vegetables to enjoy. We were not very hungry today. I had some chicken we cooked yesterday, we ate that with our salad. I like artichokes, finding good ones here is a hit and miss thing, for sure.
