I Made Some Chicken Lumpiang Shanghai

I was in a mood to cook today since the monster in laws (LOL) are gone. I made my mom's chicken macaroni soup. It's very easy and I was able to find a good use for the leftover rotisserie chicken. I shredded the chicken, then sauteed garlic and onions. Toss in the chicken, carrots, cabbages, chicken broth and evaporated milk. Salt and pepper to taste, and toss in cooked macaroni. Then I put 2 eggs to swirl and make the soup more creamy. That's it! I was still feeling adventurous, so we went to an Asian store and got some lumpia wrapper (egg roll wrapper). I saw that they have fresh ground chicken and I decided to grab some to make lumpia (egg rolls). We still have lots of leftover chicken macaroni soup, so I froze the lumpia (egg rolls) and we'll just either air fry or deep fry some for lunch or dinner tomorrow.

It helped lift my mood. After a very frustrating 24 hour-day, I am finally free from those people, LOL! At least for now.

I used to like to make egg rolls, here they do not sell the wrappers, so I will have to make them myself.

I don't know how to make my own, so I am at the mercy of what the stores have. Sometimes they do not have the right stuff, and it affects the quality of the egg rolls.

I was needing to do something to take my mind off of my monster in-laws! Cooking helped and worked, but I doubt if I am going to be that ambitious everyday.

Unfortunately my mom still lives in the Philippines. The last time I visited was in 2019 before the whole pandemic shuts down international travel. I know I am due for a visit soon, we'll see how it will go.
