I Made Some Chicken Lumpiang Shanghai

I was in a mood to cook today since the monster in laws (LOL) are gone. I made my mom's chicken macaroni soup. It's very easy and I was able to find a good use for the leftover rotisserie chicken.
I shredded the chicken, then sauteed garlic and onions. Toss in the chicken, carrots, cabbages, chicken broth and evaporated milk. Salt and pepper to taste, and toss in cooked macaroni. Then I put 2 eggs to swirl and make the soup more creamy. That's it!
I was still feeling adventurous, so we went to an Asian store and got some lumpia wrapper (egg roll wrapper). I saw that they have fresh ground chicken and I decided to grab some to make lumpia (egg rolls). We still have lots of leftover chicken macaroni soup, so I froze the lumpia (egg rolls) and we'll just either air fry or deep fry some for lunch or dinner tomorrow.

Your meal sounds delicious. I wish I had that much ambition to cook a big meal. Lately my meals have been super easy
