It is almost that time. Right after Valentine's Day comes St. Patrick's Day in March. It has always been a family tradition for my mom and me, and then in my own family to make corned beef and cabbage for St. Patrick's Day.
My mom always, always used canned corned beef. I can remember the first time I ever tasted it. My mom's method of introducing me to new foods was to have me close my eyes and open my mouth. LOL That could have been scary but it wasn't for me. The first time she did it was with corned beef. Oh boy was it good!
Our corned beef and cabbage was always a soup made with crumbled canned corned beef, chopped cabbage, and chunky cut potatoes, salt and pepper. Do you make this for St. Patrick's Day?
Two years ago, I decided I wanted a real corned beef brisket. I ordered online but did not realize it was deli-sliced. I wanted to roast it and make it like I had seen in online recipes where it was all separate on the plate. In other words, not a soup. I was greatly disappointed in that this sliced brisket had no special flavor. It did not taste any different than any other sliced roast beef. So after that, I went back to the canned corned beef and made the soup. That is also my plan this year.
Do you cook Irish foods on St. Patrick's Day? If so, what do you make?

I use to eat it but hubby ate it so much & STILL does
that it has turned me away from it, + I can't eat it anymore
cause there's WAY too much salt in it, & that's not good.
