An Egg Scramble Delight Tonight

A lot of the time, when I share what we ate, I share the finished product. But this is just scrambled eggs, and we all know what they look like. But scrambled eggs are what's on the dinner table tonight. I will melt some butter. Then add in the onion and red pepper and cook that up a bit. Then the ham. Just to warm it up. Then it's in with the beaten eggs, cooked slow and steady, folding them until they are done. But not before adding in some shredded cheese. I will make some toast on the side and these should be yummy with a little bit of ketchup drizzled on them. What's going on your dinner table tonight?

I've been super sick with the flu this week, so I've had very little appetite. Lots of water, OJ and Gatorade, very little food. Except that I have been eating oranges like there was no tomorrow. I guess it's my body's way of telling me to load it up with vitamin C.

If I eat eggs for dinner, it's because I'm doing a "breakfast for dinner" meal. I'll do that every once in a while because my daughter will sometimes ask for it. There is no bad time to eat breakfast, in my opinion.

@moffittjc We do this once in a while, too. My son will ask for breakfast for dinner, he loves it.

Why not? A little changeup is sometimes just what the doctor ordered. Besides, I never eat breakfast at breakfast time, but I do still enjoy breakfast food. So, unless I have it for dinner, I would never get it.

That sounds really tasty, although I would leave out the onions. Then top it with sour cream.

I don't know that I have ever tried sour cream on eggs, but I have surely added some into the egg mixture. I might try that soon.

@porwest I didn't have anything else to go with it. I had eggs with leeks, tomato, shitake mushrooms, and shredded cheese for breakfast.

@LindaOHio Ramen noodles were always good. I can't eat them really anymore since those little packets were basically just salt. But man, I lived on them for a while when I was younger. I would imagine for the chowder you'd just put the noodles in and forego the packet.
