Usually around St. Patrick's Day, I will have the family over for some corned beef and cabbage. For whatever reason, I tend to be known to make the best corned beef. Not that I ever do anything special. My method is simple. I boil the briskets for about 4 or 5 hours depending on the size of the brisket. Last year we made Reuben sandwiches out of them. For the fam I will usually cook two 3 or 4 pound briskets. But this year I decided not to do it, and for no particular reason. I just didn't feel like doing it and everyone has been a bit busy anyway. I will wait for some better weather and just do a barbecue or something—or maybe throw something on the smoker. But when we were at Walmart last week, they had plenty of corned beef briskets for sale. "We should get one just for us if we're not having the family over," my wife said. They were $5.98 per pound and no way was I paying that, I told her. "Let's wait," I said. "I bet you they go on sale next week." "You sure about that?" she said, almost flippantly. "Pretty damn sure," I asserted. I returned to Walmart yesterday as it turned out I needed some other things and decided to amble over to the meat department just to see if maybe they had something "out of date" on special, and lo and behold there were stacks of corned beef briskets. On sale. $3.99 per pound. I smiled and tossed a nice 3 pound flat cut brisket into my cart. I won't cook it right away. I just brought it home and put it into the chest freezer in the basement. But I felt like I won a prize. I couldn't wait to tell my wife. Told you so.

@porwest I don't need it either. I made it without adding the seasoning packet that comes with it. It really helped to keep my sodium levels down.

Well done, when the grocery stores sell special meat (or no matter what) because of a special holiday, it is always wise to wait until the holiday is over. I will buy a chocolate Easter egg as soon as Easter is over, I guess at 50% off.

@porwest Spiral cut ham is good and at under $1 a pound is a great buy. We are not kids, we can wait to buy Easter chocolate.

After Easter I am usually able to land spiral cut hams under $1 a pound and I ALWAYS pounce on that. Wise to wait, I think. But many people don't, and boy, they sure pay a price for it. lol

I have a feeling Walmart overestimated the holiday. They had TONS and TONS of corned beef briskets stocked last week, and I think inflation caused many people to say no this year to a corned beef dinner. Because even on sale, there were TONS and TONS of corned beef briskets. lol

@porwest You should have bought more! How do you eat yours, by the way? I know when I was in the US the work canteen had corned beef and cabbage for St Patrick's day. I had never had this before (It isn't a 'thing' in the UK and I don't know if it is even in Ireland) so I thought I would go for it but I was a bit surprised that it was literally exactly that - a hunk of corned beef and a wedge of boiled (I think) cabbage on the plate. Not combined in any attractive way and nothing else at all with it.

@Fleura Normally when something is a good price, I do buy more. But I have to watch my salt and only eat corned beef about once a year, so I figured, maybe more than one might be overkill. But I like to eat it mostly with cabbage and carrots and sometimes some potatoes tossed in for good measure. I also love Reuben sandwiches. Other than that, that's pretty much the only way I ever eat it. As for corned beef in general, I am not sure how it got associated with St. Patrick's Day. So far as I know, and I could be wrong, they really don't even eat it in Ireland. We Americans like to muck things up you know. lol After all, we invented the taco AND the burrito. Take that my little Mexican friends.

That reminded me of the first year that a big supermarket imported pumpkins from the US for Halloween. We don´t have them here and besides, our seasons are different. The price was outrageous and although I wanted to carve a pumpkin once in my life I would not pay that price. I just knew that they would be on sale the day after Halloween. They imported them only for rich children. And so it was. Until Halloween, they sold them for around US $20. The day after I bought one for a dollar.
