Leftovers For Supper

Last night I made a beef roast with onions, carrots, and red potatoes with the peeling kept on for supper. I will be having that for supper tonight. It is a favorite meal of mine but often so expensive unless I can find the roast on sale. Almost everything I cook will have leftovers. It makes cooking easier for me. So even though I am living alone now, I still cook as though I have a family of four to cook for. This gives me the ability to not have to cook everyday. I love having leftovers. I have had people in the past that I have known who would never want to have leftovers at all. Some were afraid of food poisoning. They were afraid because they came from other countries that did not have the modern refrigeration that we have. Others just did not want to have to eat leftovers. How about you? Do you like leftovers? Do you cook once to eat twice or more?

I don't mind leftovers and some things are good to pop into the freezer to eat later like a spaghetti sauce!! Saves time and energy!!

Yes, exactly! And many things seem to taste even better the next day as they sit marinating in the fridge.

I love leftovers but I do know people who don't. Mostly they are much younger than me and have never learnt to be frugal.

Most of the young people I have known in the past 20+ years prefer fast food or if they actually shop, they waste money on junk food. The only leftovers they want are those their parents made. LOL

of course i do;you can eat them on other days, freeze them or whatever you want with them
