And thought that it would take ages to cook rice (I like to fry it before I cook it). So I looked around and found half an eggplant.
I beat an egg, slided it, breaded it and fried it. That was perfect. It is one of my favorite dishes and if I did not eat it soon it would end up in the garbage. Luna is not a fan of eggplants.
Now I´m a happy camper and ready to take a nap. Rice will have to wait.

Eggplants taste so good! I love a fried breadplant. If I had made rice, I would have served it with rice on the side. But lately, I don´t eat too much.

@just4him I even add big chicnks of eggplants to stews. They taste much better.

I've been doing laundry and I did get the kitchen cabinets all wiped down. On the phone trying to chase down one of my son's prescriptions. Did you know you can wait ''on hold'' for over an hour at these places? So frustrating.
I need a nap from that. haha not really, it's just maddening.

@marguicha ......Yes, indeed. They hold items together. I had a spinach and mushroom omelette yesterday. So delicious. I have to have them at least 4 times a week.

I have to have eggs around. I can do a lot with them. And it helps a lot when I want to use leftovers.
