What's going on the dinner table tonight? Share with us!
I finally assembled the salsa chicken enchiladas so that's what I'm having tonight. To go with it will be leftover Mexican red rice and corn tomalito (pudding). My freezer has extra enchiladas as well as tamales made with the cooked chicken. I should make some kind of green vegetable to balance out the carbs but I'm going to live on the edge and not do that.

This is the Second Week of eating better at my house so here goes.
For supper we had little gold potatoes, baked with spicy mango salsa. Snap peas, Thin slice of Field Roast loaf. Blueberry fig bar. Tasty and filled us good enough.

My lunch was much more interesting; but for dinner I had my usual PB&J sandwich. Have a good day.
