A delicious lunch: potato salad from scratch.

I boiled potatoes with a couple of eggs. Meanwhile I took out of the fridge my homemade mayo and a jar or dill pickles. I dices the egg, the potatoes, added a bit of oil and started with the rest of the ingredients. I love to add some thinly diced dill pickles and then, at last, the mayo. I try it andadd more salt if needed. A potato salad gives me all I need for a well balanced meal. I might need some veggies later on, but potatoes are better than many other carbs. Now I´m eating it in bed and later on I´ll take a nap. I plan to make a hamburguer for dinner but not right now. Do you like potato salad? What is your recipe for it?

Potato salad needs potatoes and eggs, of course. Pickle relish and celery—must have celery! I also add chopped green onions.and make a dressing of mayonnaise and usually Dijon mustard, and season it to my own taste. Needs a bit of paprika as well.

@MarieCoyle When I have my daughters over, I have to made 2 different potato salads as they did not like mayo in them. Weird.

I love a form of potato salad that is Latvian called rosols. It includes cubed potatoes, hard-boiled eggs, ham, pickles, and many other things in a dressing of sour cream and mayo, It is very good and usually one makes a big bowl and eats it for several days or serves it at a party, Everyone has their favorite recipe. Here is one with herring too but you can add or delete items as you like,

Definitely one of my fave ways to enjoy potatoes. I love them with some carrots, corn kernels, string beans sautéed in butter.

Potatoes are favorite for me many ways. I adore potato Spanish tortillas. I love the French potato and onion soup. I can even just boil a potato and eat it hot with butter.

Potatoes are surely the best carbs. I like the simplest version of potato salad, boiled potatoes, mayo, chopped chives, no eggs, no dills.

@LadyDuck My daughters do not like mayo into their potato salad. So I dice boiled carrots, parsley and dress it with oil, salt and lemon juice. Humberto, on the other hand, loves my potato salad so much that I have to hide it from him until it is dinner time.

I love potato salad and other people do too. People requested I bring it for church potlucks. I love it. I put celery, chopped pickles, onions, mustard, etc. I even put some grapes in it one time.

We make Kachumber Salad by combining diced cucumbers, tomatoes, finely chopped onions, green chilies, and fresh coriander leaves in a bowl. Season with lemon juice, salt, roasted cumin powder, and optionally, chaat masala and black pepper.
