Mine is: Chicken Soup INGREDIENTS * 1 (2 to 3 pound) whole chicken * 1 parsnip, sliced * 1 turnip, quartered * 2 carrots, quartered * 2 stalks celery, quartered * 1 leek, quartered * 1 onion, quartered * 3 sprigs fresh parsley * 1 teaspoon chopped fresh dill * salt and pepper to taste DIRECTIONS 1. Place chicken, parsnip, turnip, carrots, celery, leek, onion, parsley and dill in an 8 quart stock pot; cover with water and bring to a boil. Reduce heat; cover, and simmer for 2 hours. 2. Remove whole chicken from soup, tear meat from bone, and set meat aside. Discard chicken bones, parsley and dill. Remove vegetables from stock pot. Using a food processor, puree vegetables and return to stock pot, along with chicken. Salt and pepper to taste.

Banana Sausage Omelet Ingredients 1/4 pound bulk sausage meat 1/4 cup diced green pepper 1 banana, sliced 1 Tablespoon butter 4 eggs 1/4 cup water 1/4 teaspoon salt 1/8 teaspoon pepper In skillet or baking pan brown sausage, breaking up with a fork as it cooks. Add green pepper and cook for 2 to 3 minutes. Stir in bananas and cook until just heated through, about 1 minute. Spoon mixture into a bowl and set aside. Melt butter in skillet. Heat until bubbly. In bowl beat eggs with water, salt, and pepper. Pour into skillet and make an omelet. Spoon sausage mixture over half the omelet. Turn half over and slide out of pan onto heated serving dish. Garnish with sliced bananas.

my favorite Holiday Minestrone Ingredients:3 tbsp (45 mL) butter 2 garlic cloves, minced 3 oz (90 g) sliced bacon, diced 1 large onion, sliced 2 celery stalks, sliced 1 cup (250 mL) sliced carrots 1 can (28 oz/796 mL) tomatoes, canned 4 cups (1 L) vegetable broth 1/2 cup (125 mL) soup noodles 1 tbsp (15 mL) Italian seasonings Salt and pepper Grated Parmesan cheese Fresh parsley Preparation:In large saucepan, sauté bacon and vegetables in butter, for 10 minutes. Add remaining ingredients, except noodles, and season to taste. Cover and cook for 15 to 20 minutes. Add noodles and cook, while stirring, for another 15 minutes. Serve and garnish with fresh parsley and grated Parmesan cheese.
