I am going to make beef enchiladas tonight for dinner and I really want to spice them up. Does anyone have any tips?

Have you thought about adding a can of rotel tomatoes to the beef mixture? They are just canned tomatoes with green chilis and are great for casseroles and soups. I always add a pinch of cumin to my enchiladas for flavor.

I started adding Goya to my meat for taco's and enchilada's and chili and lots of other dishes.. It is a mexican spice that comes in an orange box. labeled "Sazon Goya".. I add a lot of packets because it only makes it better. you can never have too much and it puts a really good mexican flavor to it..
