Why does brinjal has outer layer voilet &inner part is white.?

the outer skins contains a pigment called ANTHOCYANIN which gives the distinct color. these are strong antitoxidents. The inside basically colorless but apperara white due to its fleshy nature.

because it does not have outer layer white and inner layer violet
