This is what I do. I put the roast in the crock pot, add water until meat is covered. Then add one can of pork broth. This is when you want to add your vegetables. Since you are wanting sour kraut...then add that in. If there are any other veggies you want go ahead and add those as well at this time. Then season with whatever you want. I was always told that with meat, you can never go wrong with the green seasonings. I let it stay in the crock pot for about nine hours on low. DO NOT LIFT THE LID!!! When it is cooking, if you lift the lid, it will cause the seasonings to come out and the meat will lose that flavor! Don't do it! Not until the nine hours is up and you are ready to eat it. You know what veggie would be good with the sour kraut? Some potatoes...even the red skinned ones those would be good.

That sounds great. Thank you so much for helping me out. I never made it in the crock pot. So 9 hours low for 3 1/2 pounds will be enough???I won't open the lid. I want the meat to shred. It's a large center cut roast.

Slice off the fat and rind, rub with olive oil and salt, bake separately. Do the rest in the crock pot, if it won't fit cut into sections.
