I like to make all different grilled cheese with different breads, cheese types. I love grilled swiss on rye and I dip it in salsa. I like grilled American on wheat with fresh tomato slice and soy bacon. When I make the sandwhich I butter the sides of the bread and sprinkle them with some kind of spicey spice mix. It gives the sandwhich more flavor and makes the bread a little crispier.
You could make stuffed shells, baked ziti, maceroni and cheese. Queso is also very good.
