What is Sausage?

We usually make our own sausages so that we can be certain of what has gone into them. Depending on what we want we either use local pork, beef or venison, and we mince it finely making sure there is enough fat to make a good sausage, add spices, sometimes some rusk, couscous or oatmeal, then stuff it into sausage skins. Sometimes we make salami, but mostly its sausage for frying
