Cheese from round the world

I adore cheese, its actually one of my major weaknesses. I love contrasting different kinds of cheese from all round the world and finding out how they are made. I've made a little bit of cheese, and hope to develop this into making a wide range of varieties, so I thought I would ask teh lovely international community here, if you had to recommend just one or two varieties of cheese from your own country, what would you choose an dcan you tell me anything about how it is made, what milk type, what to use it in or eat it with and so on.
