Wondering how the soul food eaters cook their collards......

I LOVE collard greens. When I cook my greens, I make sure that I put some ham hock and a little bit of bacon grease to give it the country flavor. When they are done and simmering hot, I top if off with a few shakes of Louisiana or Texas Pete hot sauce! how do you all cook your greens?

I love collard greens too. I prepare my collard greens by first washing and tearing first. I wash the leaves by first soaking them in salt water then I rinse them off and tear the leaves into bite size pieces. I personally like to take the vein off of most of them. While doing that I have about a half to a whole cup of water in a pot simmering with smoked turkey wings, garlic, a couple bay leaves, a touch of seasoning salt and black pepper and a pinch of red pepper flakes. Once, my greens are washed and damp I put them in the pot to cook. I serve them of course with some cornbread and a few dashes of Tabasco.
