Famous Filipino Snack - Maja Blanca

This Flan like dish made from coconut milk and mashed corn is a local custard similar to the French blanc mange. It is often topped with latik (Brown curd left after coconut milk is heated and oil separates). Maja Blanca 2/3 cup cornstarch 2/3 cup sugar 1 can cream style corn 2 cups coconut milk 3 tbsp butter 1 tsp vanilla latik Combine all the ingredients in a shallow pan. Cook with constant stirring until thick. Transfer to a molder. Chill until set. To prepare latik, extract coconut milk from one big coconut. Transfer coconut milk to a pan. Cook over high fire until it begins to exude oil. Lower heat and continue coking until the curd separates from oil. Keep the oil for other uses and use the latik to top maja blanca.
