What's your favorite authentic cuisine?

I do enjoy eating at different authentic restaurants.
I have eaten at various restaurants like Japanese (love california roll), Chinese(dimsum, the best!), Mexican (TACO BELL?), Vietnamese (love their egg roll and soup), American, Thai, Italian, Greek, and of course Filipino foods.
I love to eat and I prefer to eat the one that I crave.
