My Dad recently took sick with Gall Bladder attacks... so now I am cooking dinners for 2 house holds plus holding down a full time job.... any suggestions on recipies that are quick and easy?

In generic terms pastas are quick and easy. One thing that may be possible is to cook some dinners in advance and unfreeze them as needed. 1 thing that I have found very easy to cook is a modified quiche which is nice hot or cold. Grease a pyrex dish and line the bottom with bread (these can be crusts which is a good use for them). Choose what kind of topping you like. I have done chicken and asparagus, ham and ttomata, bacon and mushroom, tomato and capsicum. Sprinkle your topping evenly over the bread. Make a mix of eggs and milk and pour it over the top. There needs to be enough to cover the topping. Then put cheese on top if you want. Bake in a moderate oven for about 30 minutes

I was told that eggs and cheese can bring on a gall bladder attack.... have you ever used fake eggs to make this?

You're probably right. I was thinking quick and easy and forgot gall bladder. Yes you can use powdered eggs just as well. Another one I like is a vegetable casserole. Boil some pasta. Chop some vegies - I use onions, carrots, zuccini, capsicum and briefly stir fry them. Add some pureed tomatoes. Mix the cooked pasta in. place in a casserole dish with some breadcrumbs on top and cook for about 15 minutes.

use ground turkey since it has the lowest fat content for meat selections. choose the 93/7 then make into a meatloaf " embutido ". mix ground turkey with chopped garlic, onions, beaten egg, bread crumbs italian flavor, pepper and salt then add tablespoon of soy sauce, cubed cheese and raisins then wrap with foil into like hotdog bun or much longer then steam for 20mins. you can cool it down for a while then unwrap from foil and slice or you may even keep it in the fridge and deliver it next day to your dad that he can just reheat that anytime or unwrapped then sliced and arranged into a platter then microwave. great with ketchup then serve with rice for the meal of a garlic toast with fresh garden salad with lite ranch dressing.
