Easy Shrimp and Wild Rice casserole

This quick- mix casserole is awesome and can be as casual as dinner at home or as show- off as for a covered dish party... 1 8 oz package of wild rice 1 lb med shrimp, peeled & deviened 2 Tbs butter 1/2 green bell pepper, seeded & chopped 1/2 onion, chopped 1 can condensed cream of mushroom soup 2 cups grated sharp cheddar salt & pepper to taste 2-4 dashes of tabasco sauce ( optional) Preheat oven to 325 degrees Cook rice according to package directions; minus 1/4 cup of water. Drain and cool In a medium saucepan, bring 2 cups of water and 1/2 tablespoons of salt to a boil. Add shrimp and cook for 1 minute, drain immediately and set aside. Melt the butter in a saucepan; add bell pepper & onion - saute until tender and transparent.( about 5 mins.) In a large bowl, combine the rice, shrimp and veggies together along with 1 1/2 of the cheese. Spray a 11x7 casserole dish with vegetable spray and pour mixture into dish. Add remaining cheese and bake for 30 mins untill bubbly.
