Carrot tea bread

3 eggs 1 1/2 cups sugar 3/4 cups vegetable oil 2 3/4 cups sifted all purpose flour 1 3/4 teaspoons baking powder 1 tsp. baking soda 1/4 tsp salt 1 1/2 tsp. ground cinnamon 1 1/2 cups finely shredded carrots Grease a loaf pan. Line bottom with wax paper. Grease. Beat eggs, sugar and veg. oil in lge. mixing bowl until well blended. Sift flour baking powder, soda, salt, and cinnamon onto waxed paper. Stir into egg mixture. Stir in carrots. Turn into prepared pan. Bake at 325* for 1 hour, or until cntersprings back when lightly touched. Cool for 10 minutes in pan on wire rack. Peel off waxed paper and cool completely.

Sounds good. I had to respond to keep it in my "discussions you've responded to" list. Is there another way besides printing it off right away? I'm seeing a lot of good recipes, but I don't know how to keep track of where they are.

That sounds yummee. I am having quite a number of visitors coming to stay in a couple of weeks time, so I am saving all the bread making recipes to surprise them. They all love home baked bread so hopefully everything will turn out well. I'm just dying to show off, as I never bake.
