What would happen if people go back to live in 18th century?

Today I was watching a show in the food channel. A chef had to cook a meal in the 18 or 17 century. I really can't remember, but he could use any toold from the 21st century. Everything had to be done like it would be then. It was very hard for then getting use to. People ate at 2:00pm because the weather and because they was no light. They had to cook in a fire place everything. no temperatu adjustment, no timer, ect. What you think you would do if you have to go back to does times. Do people appreciated what they have these day? Please let me know your opinon.
