# 5 Greek pizza

Prheat oven to 350*. Grease inside of a 10" deep dish pizza pan. In a large bowl, combine spinich, scallions, cheeses, parsley,eggs,salt, and pepper. Cover bottom and sides of pan with phyllo dough, folding edges over so that 1/4" extends above rim of the ppan. Sprinkle dough on bottom of the pan with melted butter. Fill with spinach mixture, then use any remainting phyllo dough to make decorations on top of spinach. ( stips like tic tac toe ) Bake 50 minutes. Increase oven toem to 450* and bake pizza an additional 10 minutes or until dough turns golden. Ing: 2 pkg. 10 oz. each chopped spinach, defrosted and squeezed dry. 1/2 cup sliced scallions both green and white parts 1/4 cup crumbled ricotta 1 1/2 cups crumbled feta cheese 1 cup grated mozzarella cheese 4 tbs. grated parmesan 1/4 cup minced fresh parsley 3 eggs beated 1 tsp. salt Several grindings of black pepper 8 ox. phyllo dough 2 tbs. butter

What a good recipe I never thought of using phyllo dough before.

It is really different than most pizza's, but you will love it if you like the ing. Good luck, let me know if you make it and what you thought.

We tried it yesterday but had to improvise with cottage cheese (did'nt have any ricotta) and it was delicious. The phyllo dough to me made it really special. Thanks.

I thought I would try this and it was soooo awesome. This was probably the best darn pizza we ever had. It reminded me of spanikopita without all the fuss. THIS is a favorite from now on! :) Unbelievably delicious.
