I am hooked on the perfect bbq. I started just making ribs, pulled pork, and brisket for family and friends at parties. Then I entered a bbq competition. My first try I won Reserve Grand Champion. I want to know what kind of bbq others prefer. Do you like dry rubs or wet sauces? What kind of competitons have you been in?

I know this discussion is old, but I am hoping for some help. I am starting to make brisket more often, but I get very inconsistent results on flavor. I have gotten the moisture part down, but it just has very little taste. I use marinade then dry rub and smoke slowly for about 1 hour and 15 minutes per pound. Any suggestions would be appreciated.
