i want to make a cake and decorate it for a special event, but i won't have much time close to the event. would i be able to decorate the cake with buttercream icing and freeze it and then defrost it when i need to use it? if so, what would the best way to defrost it be?

You could freeze the cake and just let it defrost at room temperature, but I would not freeze it after being iced. I think the icing would become quite loose and start drooping because of the added moisture from the ice crystals. It would be like adding too much milk to the icing and it becomes runny. You could test it, though, by making a cake or cake mix, using the same kind of icing you plan on using, and see what happens.

If the cake is covered with all white frosting it's ok, b/c it won't bleed, but if the cake has color in it, then you'll have a problem. The best way is just to cover with white frosting, wrap with plastic paper and freeze it, then early on the event day defrost and finish decorating with borders and other designs.
