Diabetic Oriental Fish and Rice

1 package (6.2 ounce) fried rice (rice an vermicelli mix with almonds and Oriental seasonings) 2 Tablespoon margarine or butter 2 cups water 1/2 teaspoon grated lemon peel 1 bag (1 pound) frozen corn, broccoli and red peppers, thawed 1 pound mild-flavored fish fillets, about 1/2 inch thick 1/2 teaspoon lemon-pepper seasoning 1 tablespoon lemon juice 2 tablespoon fresh parsley, chopped In 12 inch nonstick skillet, cook rice and margarine over medium heat 2 to 3 minutes stirring occasionally, until rice is golden brown. Stir in water, seasoning packet from rice mix (rice-a-roni) and lemon peel. Heat to boiling; reduce heat. Cover and simmer 10 minutes. Stir i vegetables. Heat to boiling, stirring occasionally. Cut fish into 4 serving pieces; arrange on rice mixture. Sprinkle fish with lemon-pepper seasoning; drizzle with lemon juice. Reduce heat. Cover and simmer 8 to 10 minutes or until fish slakes easily with fork and vegetables are tender. Sprinkle with parsley. serves 4

Great recipe for me thank you as you are aware now that I have diabeties so always on the look out for recipes which I can consume until I can get rid of this dreadful disease, thank you I appreciate it.

If i ever put any weight on it will be all because i wake up every morning and i sniff out all the food you post on here lol. You make me feel hungry even on a full stomanc! I really like your recipes and every day i look forward to recieving them in my inbox.

thanks for the recipe here is another recipe for you Microwave Diabetic Fish with Cool Cucumber Sauce 4 servings 22 min 15 min prep Change to: servings US Metric 1 lb fresh fish fillets or frozen fish fillets 1/3 cup chopped cucumbers 2 tablespoons reduced-calorie mayonnaise 2 tablespoons plain low-fat yogurt 1 1/2 teaspoons prepared mustard . Turn under any thin edges of fish. In a 12 x 7½ x 2-inch baking dish (use an 8x8x2-inch baking dish for low-wattage ovens) arrange fish fillets with thicker portions toward outer edges of the dish. Cover dish with vented clear plastic wrap. Cook on 100% power (high) for 4 to 7 minutes or till fish flakes easily when tested with a fork, giving dish a half-turn after 3 minutes. Meanwhile, for sauce, in a small bowl stir together cucumber, mayonnaise, yogurt, and mustard. Serve with fish. hope you liked it
