Scottish Clootie Dumpling

Ingredients 4 oz wholemeal flour 6 oz fine brown breadcrumbs 4 oz beef suet, finely chopped (butter may be substituted) 1 teaspoon baking powder 1 teaspoon ground cinnamon 1 teaspoon ground ginger 1 teaspoon ground nutmeg 1 teaspoon ground cumin 4 oz sultanas 4 oz currants 2 tablespoons black treacle 2 eggs 1 large cooking apple Juice and zest of one lemon Fresh orange juice to mix A square of cotton or linen cloth, about 22 inches square, I use an old pillow slip turned inside out Directions Boil the cloth for a few minutes and then spread it out on a table (use tongs etc. to prevent burning yourself). quickly sprinkle with about a tablespoonful of wholemeal flour and toss the flour to coat the main centre of the cloth quite thickly. Stir the treacle into the eggs and then place into a bowl with all the other ingredients and mix to a stiff consistency with a little water. Place in the centre of the cloth. Bring up the edges and tie with a string, leaving a little space for expansion due to the inclusion of the baking powder. Hold the tied ends and pat the cloth into a round shape. Place the pudding into a pot of boiling water, which should come halfway up the side. Cover and simmer gently for 4 hours. Occasionally check and top up the water if necessary. Once the pudding is cooked plunge it into cold water for about one minute to release it from the cloth. Remove the pudding to a bowl and untie, cover with a plate and reverse it. Peel off the cloth and place the pudding into a hot oven to dry off the skin. Serve hot with any accompaniment to like (custard, brandy butter etc.). Any left-over Clootie dumpling may be sliced and fried, alternatively wrap in foil and re-heat in an oven (if re-heating in a microwave oven do not wrap in foil).

thanks for the recip here is another recipe for you microwave clootie dumpling this recipe has been tried and tested by my friends,family and work mates. they never expect it to work as traditional dumpling take hours steaming. this takes about 10mins. tastes authentic or i would not use it or be asked for copies of it so often. very quick and easy. a cheats delight. 4 ounces white sugar 2 beaten eggs 1/2 pint water 1/2 lb plain flour 1 tablespoon mixed spice 1 tablespoon cinnamon 1 teaspoon bicarbonate of soda 1/2 lb margarine or butter 1 lb mixed fruit 1 tablespoon black treacle into a heavy pan place the following ingredients. water,spices,fruit,sugar,butter and treacle. bring to the boil and simmer for 1 minute only. remove from the heat. stir the rest of the ingredients into the mixture. it will appear to start cooking the mixture. do not worry. put mixture into pudding basins which have been lined generously with cling wrap. wrap should flap over the sides of the basin. tap to get rid of air pockets. place into the microwave for about 7mins. do not cover the top with the cling wrap. each microwave is different and depending on size and power you will have to use your own judgement. they are ready when a skewer comes out clean and feels firm on top. now its up to you. play around with the sizes and make individual ones (approx2/3mins) or play about with the fillings. hope you liked it

my mum as done this way aswell and it was great as i dont like rasins or sultans she left them out and put in nut instead and that was great

Oh this one looks absoluately yummy, I love that it has cinnamon and ginger in it which are really good for our health, I will defintely be giving this one a go, thank you for this wonderful recipe.

my mum used to make this when we we`re younger i dont like it because of the rasins and the sultanas thanx for the memories of this again
