I love to do cake decoration as a hobby from buttercream freshcream and royal icing.

Hi sweetpunch, maybe you can try low fat whipping cream brand "Land O' Lake Fat Free half and half". This whipping cream it is made of skimmed milk and taste as good as normal whipping cream.

For chocolate coating you can use 400gram of compound choclate to 150 gram o canola oil, olive oil or low fat oil, instead of butter or magarine.

I am the official cake decorator in our family. I make and decorate all the birthday cakes for my kids and my nieces and nephews. My favorite kind of icin to use is Wilton's Buttercream icing recipe. It always turns out good and has a nice consistency. Buttercream Icing Ingredients: * 1/2 cup solid vegetable shortening * 1/2 cup butter or margarine* * 1 teaspoon Clear Vanilla * 4 cups sifted confectioners' sugar (approx. 1 lb.) * 2 tablespoons milk** Cream butter and shortening with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep icing covered with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Rewhip before using. I had just been using shaped pans or adding simple toppes to cakes until earlier this month when I discovered frozen buttercream transfers and fell in love. The are so easy to do and look wonderful. I love to do it also. I used to decorate cakes for Disney and other places in the store I worked at. I like whipped and butter cream frostings. I love to make roses and the shell pattern around the cake. I also love making them different with unusual designs. The biggest problem is cutting it to serve. I need to leave the room and have someone else destroy it. Sob.
