2 cups of any clear juice 3 1/2 cups of sugar 1 pouch of liquid Certo Sterilize and set aside 6 - 10 jelly jars. Clear an area where jars can sit undisturbed for 24 hours and lay out a dishtowel. Mix juice and sugar in a large pan and bring to a boil over medium heat, stirring until sugar dissolves. Stir in Certo and raise flame just enough to bring to a full rolling boil and maintain boil for one minute. Remove from heat and skim foam from the top, pour quickly into hot sterilized jelly jars, wipe rims and tops with a damp towel of any drips or spills, center lids on jars, screw down rings just until a slight resistance can be felt (do not screw on tight) and process in a hot bath for ten minutes to seal. Place jars on a towel. After jars have rested for twenty four hours test your seal by pressing gently on the center of the lids. If they 'pop' the seal is incomplete and must be refrigerated promptly. Store on the shelf and refrigerate after opening. Date your jelly jars, this jelly will stay fresh for one year.
