I need a recipe for carrot cake please:-)

Hi I love carrot cake but have no idea how to make one, also it can't contain nuts as my son's allergic, any recipe minus the nuts, he can eat seeds, if this helps. Thanks

I love carrot cake to! Though I usually will make the carrot cake & make them in to muffins instead of a cake. I find them to be less messier sometimes. I enclosed a recipe though of 'Carrot Cake' if you are at all interested. It's yummy because it's so moist. I know every time I make it.. That it ends up going so fast that I am always having to make more for some reason. haha. I hope if you try it that you like it just as much. And it doesn't have nuts in it either so I am sure that will be of some good use! ENJOY! Thanks for allowing me to share! xx "Carrot Cake." Ingredients are as follows: - 1 cup of vegetable oil - 3 eggs - 1 1/2 of a cup of sugar - 2 cups of shredded carrots - 2 teaspoons of vanilla extract - 1 cup of shredded sweetened coconut - 10 ounces of crushed up pineapple in juice - 2 teaspoons of baking soda - 1 teaspoon of salt - 2 1/2 of a cup of flour Directions are as follows: - First off preheat your oven to 350 degrees F. As well spray a 9 x 13 pan with non-stick spray. - Take a large bowl that you have.. Beat the eggs & gradually add the sugar. Continue beating & then add both the oil & vanilla in. Then add the carrots, along with the pineapple & the coconut. - Then sift in the flour, along with the baking soda, & the salt together. Afterwards add the flour mixture in to the wet ingredients & mix very well. Then pour the batter you had created in to a prepared pan. - Bake the carrot cake for 25 minutes or at least until the top if a golden brown.. And then take a tooth pick to see if it comes out clean. If so remove from oven. - Allow to cool for about a half n hour or an hour & then add whatever frosting your heart desires. Serve & ENJOY! xx

Sounds yummy, how do you turn it into muffins? I will def try it.

All you have to do is put the mixture in to muffin pans. Cook at the same temperature or lower. And just make sure to keep checking them with a tooth pick to make sure they are done. I love making this carrot cake recipe in to muffins. I find a lot of people will actually ask to take some home with them each time! I hope if you try this recipe you enjoy it as much as we do! . .
