Sweet Potato Biscuits???

I was reading a book (actually a mystery novel) and the character was eating something caaled a sweet potato biscuit. They discribed it as moist, sweet, almost like a muffin. Does anyone have a recipe for such a thing? It sounded soooo good. The character was visiting Louisiana when she hed it.

Here's a recipe I found. 1 cup flour (all purpose) 3 tsp baking powder 2 tsp sugar 1 tsp salt 2 tbsp shortening 3/4 cups mashed sweet potatoes 1/4 cup milk Preheat oven to 400 degrees. In a bowl, stir flour, baking powder, salt, and sugar together. Cut in shortening until you get small beads or pieces. Mix in the sweet potatoes and milk until dough is soft. Roll the dough out on a floured surface, to a 1/2 inch thickness. Cut out biscuits and place 1 inch apart on a greased baking sheet. Bake 12 to 15 minutes. Sounds yummy.

Thank you so much. I can't wait to try it. My husband thinks that wnything with sweet potato is disgusting so I told him that it just means more for the rest of us.

Lol, he's not the only man that seems to hate sweet potatoes. I have a friend that say he hates the texture of them...but I would think that excuse would be erased if they're mashed and blended in a biscuit. Hope they turn out great!
