Low-carb Catholics...what do you do for communion?

Bread and similar items, like wafers, are pretty carbohydrate-laden, and it causes me to wonder what Catholics who are on a low-carb diet do when confronted with the communion wafer. Is there a low-carb Jesus substitute available? Can you use a bit of lettuce instead? Maybe a bit of beef jerky, since it would be actual meat and would give a more authentic feeling to eating the symbolic body of Jesus. The wine, or grape juice that is often used as a substitute is also a carb problem. Perhaps diet grape soda would suffice? What does a modern Catholic on a low carb diet do to match their dietary restrictions with their rituals of faith?
