What am I to do with the taste of AMPALAYA [BITTER GOURDS]???

The entire Philippines is halved in this one GREAT issue: The taste of AMPALAYA [bitter gourd]... LOL Many people say it's good but some people think otherwise.. Me, I personally dont like it.. It tastes just like the common paracetamol tablets that anybody can buy at a near counter... Wonder why it's part of many Pinoy great foods... I've heard there's a solution to this highly bitter taste of this vegetable but I don't know this method... Do you know this method??? I sincerely would want to know.. So I may it the vegetable.. I really would want to... B-)

Put a little salt to the sliced ampalaya and squeeze out some juice to reduce the bitter taste. But with this procedure, you would be reducing also the nutrient content of the ampalaya. Better learn to eat the ampalaya without removing the bitter taste for it is in the bitterness where we get the necessary nutrients for good health.

It is one of my most loved veggies, you can bring down a great amount of bitterness down by soaking the vegetable in a salt brine like solution for 15-20 mins and then gently squeezing the water out. I do that when I need to fry it up whole. But it has great health benefits and if you can tolerate drinking its juice even an ounce or two every morning it helps in keeping the blood sugar level steady and even lower it for patients with diabetes by certain numbers if taken everyday! In the west they are marketing pills made of bitter melons to fight many diseases.

We also have ampalaya as the main ingredients to herbal medicine that can help diabetic patients. I guess it is ABS herbs? I am not sure. I think the idea of drinking the juice is great. Just think of the nutrients you just squeezed out from the vegetable. I am not diabetic but I'm sure there's more nutrient or plant enzymes that could help in my body functions. ;p

You are right stargazer there are other nutrients to it too! it is just so less know in other parts of the world that people ignore it for the bitterness. a + for you!

To reduce the bitter taste of ampalaya, slice it in small thin pieces, then squeeze out some juice putting a little salt. It would be better if you learn to like the bitter taste of the ampalaya because the nutrients are there and it is even used as cure for some illness.

aside from the famous pinakbet this has known to be of much use in our good for this recipit. we can laso add bitter gourd in our cooking of pickle with carrot expert.

I used to find ampalaya so ugh! yuck! while I was growing up..but after eating it for sometime I learned to love it even with its bitter taste. It really take sometime getting used to and become an acquired taste. My father cooks a very tasty ampalaya and I could even it raw with vinegar and a little salt. It's really good.

I used to not like bitter gourds but come to think of the nutrients I would be getting from them. I gave it a shot. Know I enjoy eating them. I got used to the taste. Actually you make it into salad- use french dressing. sliced it thinly add tomatoes and onions. to remove the bitterness soak it in water with salt- let it stay for at least a couple of minutes- squeeze out the juice. Then cook the bitter gourds with eggs or with black beans. by the way dont forget to saute it with garlic, onion and tomatoes. The greener the ampalaya the bitter it is but the better .:} enjoy your meal.

When you get older and maybe wiser, you will realize the benefits that you get from eating this bitter food. Taste can be learned and acquired. I like my ampalaya or bitter gourd sauteed with egg or like a salad with tomatoes. Yum!

This is the one food that I, a confirmed foodie, cannot eat! :) It's so bitter that it really can stop you from tasting anything else and that's a problem for me... It's also in Asian and India recipes and heard that it's good for health reasons... But the only benefit that I see is that it will stop a person from eating, for days! :) LOL!

well you have to put some salt on it..it must be cut according to your design though first then pressed them and let the juice be out of the ampalaya..it will lessen the taste of it..but the nutrients will be sacrifice i mean lesser nutrients..

I used to hate the taste of bitter gourd but now I appreciate it. My in-laws do sprinkle some salt into it and soak it into the water before cooking it. You should also use the water that you soaked in so that you won't lose the minerals of this vegetable.

Ugh. I hate ampalaya. I can't stand it. I'd rather chew off my own arm than eat it. However, they say that if you don't wash the inside of the ampalaya when you cut it (only wash the exterior before cutting) that the taste will be LESS bitter. Take note, this doesn't erase the bitterness a hundred percent.

bitter gourd - ampalaya - is a good source of iron (was it?) & i do like dishes that are concocted with ampalaya - ginataan, stewed, kinilaw, etc. - as long as its well prepared by lessening its bitterness otherwise if its too strong, u will only have one taste for all other dishes as it stays in your taste buds for sometime :-) & you dont want that to happen. usually its get soaked to remove the bitterness or some of it - w/ or w/o salt, simmer it with hot water, spread sugar over it, etc. but the most common will be soaking it w/ salt & drain out the water - the draining part is where some of its mineral values gets lost , so its really just a matter of food that you get used of but enjoy trying it out :-)

yahh.... ampalaya one of the vegetables that i dont eat.. but i saw it in tv that we can get many vitamins in ampalaya.. unlike the others.. they say it can cure diabetes..

This may sound weird. I love eating ampalaya. Actually, the bitter it gets the more I like it. Try eating ampalaya more often to get use to its taste. But if you don't soak it in water before cooking.
