Watermelon And Feta Salad With Ouza Dressing

Preparation Time 15 minutes Ingredients (serves 4) 1/4 (about 1.3kg) seedless watermelon, rind removed, cut into thin wedges 1 cup fresh mint leaves 1/2 red onion, cut into thin wedges 50g reduced-fat feta (Clover Creek brand), thinly sliced Ouzo dressing 2 tbs red wine vinegar 2 tbs olive oil 1 tbs ouzo Salt & freshly ground black pepper Method To make the ouzo dressing, whisk together the vinegar, oil and ouzo in a medium jug. Taste and season with salt and pepper. Arrange watermelon, mint, onion and feta on serving plates. Drizzle with ouzo dressing and serve immediately.
