Fats: Saturated, Unsaturated, Mono, Poly, Trans.

How well do you really know about the fats we eat? The old school of thought is that fat is unhealthy. Now they say good fats help with cell walls. What is so bad about trans fats that made New York ban this substance from all its restaurants? I am lost with all these fats. Are you? Is there a better and easier way to understand, remember and therefore cultivate healthy eating habits for a healthier life? My immediate worry is the cellulite in my thighs. Seems to be getting bigger everyday! Or am i just paranoid? The very little that i know of these fats is that some are highly reactive because they went through a process of hydrogenation. Anyone care to enlighten me on this fatty issue?
