can we use geen part of leeks?

Yesterday I bought leeks.TOday wanted to cook them.bUt i dont know can we use the green leaves in cooking or not?

Usually I use only the white and light green portion of the leeks, but I don't waste the dark green. I pack the dark green parts in a freezer baggie and freeze it. I use it to make vegetable soup stock. I use the dark leeks, a carrot, half an onion, some parley and celery stalks which I have also saved, season it with salt and pepper let it simmer for a while, put it through a strainer and make vegetable soup with the clear broth. I discard the vegetables I used to make the stock. Tell us how your leeks turned out.

hmm intresting.There is no wastage .very very good idea. I will post how my leeks turned out,not yet started decided to cook for dinner. thanks for the response.

Well, according to the Wikipedia enty on leeks you can eat the white part and the light green part. I'm guessing the upper dark green part either dosen't taste good, or is too fiberous. What are you planning on making? I like potato leek soup myself, though I haven't made it in ages. Ther are tons of recipies for it on the web, but I tend to make a lighter version omitting the milk or cream (I'm lactose intolerant so thats make me want to omit the milk even more). If you have a stick blender, or regular blender you can use that to make the soup creamier. Happy Cooking!

thanks for the advice.I am planning to saute the leeks with shrimp.Its my new dish trying my own india version.If it turns good I post the recipe as soon as I finish my recipe.mean while I check in the web or different recipes.lets see how it works.

I have always heard that you are not supposed to use the dark green parts of a leek. It is much like the top of a carrot (or other veggies that grow underground) in regards that you discard it. Hope that helps.
