Oatmeal Pancakes Ingredients 1/2 cup oatmeal 1/4 cup low-fat cottage cheese or tofu 4 egg whites 1 tsp vanilla extract 1/4 tsp cinnamon 1/4 tsp nutmeg Directions 1. In a blender, process all ingredients until smooth 2. Add batter to a non-stick pan and cook in the oven at medium heat until both sides are lightly browned.
