What dishes you can cook with eggplant with it?

Here is a recipe I got from a co-worker... Eggplant cavier Ingredients: 2 large eggplants 4 plum tomatoes 1 medium spanish onion 4 cloves garlic minced 2 tablespoons balsemic vinegar 1 teaspoon dijon mustard 3 tablespoons of olive oil salt and pepper to taste Preparation: Preheat over to 400 degrees. Use a fork to pierce the eggplant in several places. place the pierced eggplant on the oven rack and bake for 1 hour, or until soft. Cool, peel and chop. In a thick bottomed pan, preheat oil, and add diced onion and garlic, Sautee on high heat for about 3 minutes. then, add the diced tomaotes, eggplant and simmer for 15 minutes, stir occasionally. Add the remaining ingredients and simmer for an additional 10 minutes. Serve at room temperature.

I don' know what you would call this but I enjoy it and it is easy to make! I make a sandwhich out of the following: *Mini french rolls (homemade or store bought)- warmed *Eggplant (grilled or browned on both sides) *feta cheese *thin sliced red onions *kalamata olives *I have added sauted portobello before - yum *arugula (or other green) dipped in a sauce of olive oil, stone ground mustard, and liquid from jar of sweet peppers *sliced sweet peppers from jar This is a very changeable 'recipe' and is absolutely delicious and simple to throw together.
