Polenta Recipes?

I have a roll of precooked polenta, but I'm at a loss as to how to cook it like it comes in restaurants. Does anyone have any tried and true recipes for pre-cooked polenta that they could be kind enough to share with me?

Polenta can be sliced and grilled, topped with sauteed Portabella Mushrooms and melted Mozzerella... or any one of at least 1000 recipes for this versatile treat... I tried a recipe once that called for slicing it up and browning it in a frying pan with a little butter. Then it was supposed to be served with spaghetti sauce and hot sausage. It came out real mushy so I don't think I did it right. I'll be watching your responses on this one, because I'd like to know too.

Polenta Mushy-ness, is the result of Polenta that should be colder than it probably was when you pan grilled it... it must be grilled cold, and cooked quickly... it also helps if it's turned several times during the browning process... Expert Village for you! :) http://www.expertvillage.com

That actually sounds good.. I have been keeping the roll chilled just in case I get a 'to-die-for' recipe that I can whip up as soon as I can. I guess I'm off to pick up some sausage? :)
