I like this recipe because it also gives us a little information about the dish. It's a really simple but rather impressive dish.
Chicken Adobo
From John Fischer,
source:http://gohawaii.about.com/od/luaurecipes/r/chicken_adobo.htm
Adobo is the Philippines national dish and a favorite with many people in Hawaii.
What most people think of when they hear the word "adobo" is a stew with the basic elements of chicken and pork in a sauce of white vinegar, soy sauce, garlic, and peppercorns. The variations are endless and whether served dry or moist, whole or shredded, the subtle sourness that makes the dish unique is always present. This is Hawaii Governor Ben Cayetano's recipe for Chicken Adobo.
INGREDIENTS:
3 pounds chicken thighs, cut into serving pieces
1/2 cup white vinegar
1/2 cup soy sauce
1/4 tsp peppercorns, crushed
1 teaspoon brown sugar
5 garlic cloves, crushed
3 bay leaves
Salt to taste
PREPARATION:
Combine all ingredients in a pan, cover, and allow to marinate one to three hours. Bring to a boil, then lower heat and simmer for 30 minutes. Uncover the pan and allow to simmer for an additional 15 minutes or until most of the liquid has evaporated and the chicken is lightly brown.
Serve with white rice.

Chicken Adobo
Ingredients
2 pounds Chicken pieces
1/2 bottle White vinegar or cider vinegar
1/2 bottle Soy sauce
3 Bay leaves
Garlic, minced or powder
Onions, minced or powder or dried
Juice of 1-2 lemons
Pepper to taste
Water
Preparation
Rinse chicken pieces and place in large pot. Add vinegar and soy sauce to your own personal taste (I like it strong and use more vinegar than soy sauce)...I'd recommend at least half and half. If the chicken is not completely covered with sauce add water to cover...there should be more sauce than water. Add bay leaves, garlic to personal taste (again I put A LOT!), onions to taste, lemon juice and pepper. Bring to a boil, allow to simmer approximately 1-2 hours and then serve with rice. Sorry there's not a specific recipe, but you're nose will tell you when the mix is right! :)
Freeze in ziplock bags with sauce. thaw in refrigerator. Reheat in sauce until bubbly.

Here is a simple recipe I found on eHow....I think I might try this soon too. I've never made Filipino food before.
Chicken Adobo
Things You'll Need
1/2 c. vinegar
salt
1 to 2 bay leaves
3 to 4 lb. chicken
6-10 cloves crushed garlic
1/4 c. soy sauces
1 tsp. crushed peppercorns
Steps
Cut chicken into 3- to 4-inch pieces.
Combine chicken, garlic, peppercorns, bay leaves, vinegar, soy sauce and 1/2 c. water in a large pot.
Heat until boiling and stir frequently.
Turn heat to medium and let simmer for about 30 minutes. Stir occasionally.
Adjust flavor by adding more soy sauce or vinegar.
Serve with steamed rice.
