Pepperoni Pizza Potato Skins

Here is a Weight Watcher recipe I found this morning. It looks so good, I think even my kids would like it.
Pepperoni Pizza Potato Skins

Level of Difficulty: Easy
Like a baked, stuffed potato but with a crispier skin. Toss on chopped spinach or broccoli, if desired.
Ingredients
1 sprays cooking spray
2 large potato(es), baked, cooled completely, quartered lengthwise*
1/3 cup pizza sauce
2 oz pepperoni, finely chopped
1/3 cup Kraft Low-Moisture, Part-Skim Finely Shredded Mozzarella Cheese, or other brand
1/8 tsp dried oregano, red pepper flakes or garlic, or to taste
Instructions
Preheat oven to 425ºF. Coat a baking sheet with cooking spray.
Slice top half or two thirds of potato flesh off each potato wedge. (Reserve potato flesh for soup or mashed potatoes, if desired). Spoon about 2 teaspoons of pizza sauce over each potato wedge; sprinkle wedges with pepperoni and then with cheese.
Carefully place potato skins on prepared baking sheet. Bake until cheese melts and potatoes are hot, about 6 to 8 minutes. Season to taste with oregano, red pepper flakes or garlic. Yields 2 potato skins per serving.
Notes
*Make sure the potatoes are cooled completely before slicing and scooping out the flesh or you may have a hard time forming the skins.
Thinly sliced, Italian-style cooked chicken sausage also makes a tasty pizza topping; try it instead of pepperoni (may affect POINTS values).

That looks so good, I am going to try this recipe, two of my favorite things pizza and baked potatos and you got it from weight watchers, I can eat and not feel guilty,lol, thanks for the recipe.

One of my favorite pizzas is a baked potato pizza.
On it... is crust, sour cream (as the sauce,) baked potatoes thinly sliced, cheese, bacon & chives. It is just wonderful!!!
This could be a pretty lowfat thing, too, if you use the reduced calorie sour cream & cheeses. Turkey bacon makes a good replacement for real bacon, too!

Awesome! My mom and I are always trying to find now WW recipes. Of course.. if I'd behave and stay on WW I wouldn't be looking all the time for new ones! LOL But this one is great! Thanks!

LOL! I, too, have a hard time sticking to WW. I'm just dieting on my own, and having pretty good success. It doesn't hurt to find something yummy, though, to eat, does it?

Thank you for sharing this. IT sounds delicious. I will definately have to bookmark this to write down later. It will also help with my diet too. I know that after a while I get tired of the same thing over and over again.
