Your best diabetic friendly meal favorites?

I've rencently discovered that my mother has Type 2 Diabeties, which means a whole new way of eating for us. I was devistated at the thought, as she's not a fan of healthy eating and I really think that food will be the key in helping or hurting her health. Well, I checked out the Splenda website and they had a few recipes that looked really good, gave me some hope. So I was wondering, do you have any diabetic diet friendly favorites? What are they and how do you prepare them?
