I am very sorry that I used a wrong word here.It is "boiled noodles".It has a not very long history,just about 100 years.Henan boiled noodle is the most famous in China. "Lan Zhou La Mian" is also very famous in china, I saw the friend dounstairs said it.Lan Zhou is a province in China.I am sure you can not eat it unless you come to China.
As to say "zha jiang mian", it is also available in Korea.When I saw Korean soup,I found almost every pepole likes it.Maybe there is something different between the noodles in China and Korea,I am not very sure.Thank you.

Henan, "Lan Zhou La Mian," and "zha jiang mian" really seem to be very delicious noodles indeed.

Sadly, though, I feel that I would not have the chance to have a taste of such noodles as of yet because I neither see myself visiting Korea nor China anytime soon.

From the way you share your experience, you must really have a fantastic time eating hot and spicy canton with your coke, or any available drink you could get your hands on.

Don't you put kalamansi on your pancit canton, though, to basically make it more flavorful?

Since I would really want to try out the Crispy fried noodles and Pan fry noodles you're talking about, may I know what your "fave chinese restaurant" is? If I may, could you kindly tell me what's it and where I could find it?

I must agree that sotanghon guisado is certainly one of the best noodles around. I especially like it with pepper to essentially spice it up.

I'm here in Bahrain, my fave chinese restaurant here is called Beijing. The Crispy Fried noodles and the Pan Fry looks the same but differ in taste. The noodles that they used is like the one in pancit canton, but the ingredients and the taste are different.

SOme uses soy sauce when cooking pancit canton, some oyster sauce, I use oyster sauce. I don't really know what the sauce they used in the crispy fried noodles and pan fry, I would love to know and try cooking it one day.*hehe* BTW, when they serve the crispy fried and pan fry noodles, they serve it dry, like the noodles are dry and they put the sauce and the ingredient on top and you mix it all together..it's something different from the noodles we always have in Philippines. But still I can say, nothing compares to my mother's sotanghon guisado and bihon guisado! LOL!!

The noodles of Beijing seem exceptionally interesting, given that their quite unique compared to the ones we have her in the Philippines.

I would surely love to try that out, if ever I would have to golden opportunity to visit Bahrain someday.

Don't you think, though, that it's just about time for your mother to open her own noodle house, considering that, as you confidently said, "nothing compares to my mother's sotanghon guisado and bihon guisado?";)
