I love kimchi, too!!! I'm thinking of preparing some (used to prepare before) but I don't have much time recently. Will find time soon!

Kimchi IS from Korea. The story I heard is that because there are no vegetables during winter, the Koreans of old thought of preserving vegetables by curing them with spices just before winter and then during winter, they would put the cured vegetables in earthen jars and buried them in snow (nifty, huh? there were no freezers then, but, they were able to store vegetables in "natural freezers") That way, even during the winter months, they were able to eat vegetables. But, the vegetables taste good as kimchi, so now, kimchi is prepared all year round, eaten everyday, and they even made kimchi refrigerators for the purpose! I love kimchi. Love, love, love kimchi!

I know kimchi is from Korea. It has been Korea's tradition to prepare kimchi as an appetizer. Where have you heard that it is not from Korea? Happy mylotting.
