Chili for diabetics

A co-worker has recently discovered has has diabetes and has to take insulin. His wife has been serving him so much salad he is going insane. I looked about online and found that pork is better than beef for him so I decided to make some chili. I am hypoglicemic so I figured it would be good for me too. Here is the recipe. Black Bean and Pork Chili Pork roast 2 cans black beans 1 small can original Rotel 1 small can diced tomatoes and onions 1 can corn, no salt added 1 can red kidney beans 1/2 pkg. chili seasoning Cut the pork roast into chunks, place in crock pot and add the remaining ingrediants, cook on high for about 4 hours, or till pork is falling apart. When ready to serve add some freshly chopped onions, optional. This turned out so good. We both loved it. I bought a diabetic cookbook soon after and found a similar recipe. How do you keep your diet delicious with sugar issues?
