I never heard of it but it has to be because of all the eggs.

This is the first year that I didn't have to make egg salad from the easter eggs. When we ran out on Wednesday, my youngest was so upset. So I boiled up some more and will probably make egg salad for lunch tomorrow.

Just googled it and this is what I learned:

Traditional Time for Egg Salads

It's very traditional in the United States for families to hard boil eggs for Easter. Most households usually boil an average of 1 to 5 dozen eggs each year and join in the tradition of painting and dying the eggs. Kids tend to bring home even more eggs found from Easter Egg Hunts which leads to many left over eggs and many Moms and Dads trying to think of ingenious ways to eat the left overs.



Egg Salads served in some form or fashion tends to fill kitchen tables and lunch boxes the whole following week after Easter. Homemakers search the Internet for new inventive recipes each year in order to use up all the hard-cooked eggs. Hence..... National Easter Egg Salad week.

Oh it is so easy. You start with hard boiled eggs, cut them up and put in a bowl, add mayonnaise, salt and pepper. This is how I like it. I like my real creamy, so I do add more mayo than other people. You can also add chopped onion, chopped celery or celery seed. It is very yummy.

Now I know I am making it for lunch tomorrow.
