Do you always brown beef and pork?  email this discussion to a friend?

Whenever I make stewed beef, beef stew, beef roasts or pork roasts, I always brown the meat first. Any kind of meat that is either cut up or going to be put in an oven or pot with liquid, I just think it tastes better browned. I think it gives it more flavor. What about you? Do you do this, or do you just boil it? And however you do it, did your Mom do it the way you do?

I agree, I do the same thing. I think it tastes better and I've found that whatever I am making gets cooked faster too. My mom never did this when she cooked. My husband was the one who actually taught me to do this, so now I do it all the time.

I always brown it first and yes that is the way my Mother before me did it.
I feel it reduces the contamination factor as well..as browning it..to my mind it is possible it would not be as well cooked if boiled..
I have often had for instance soups where the meat had been boiled and not quite as done as I like it to be.

Nope. Over the years I've experienced with different ways to cook. I add beer, wine, rum and different flavored preserves; like cherry, pineapple, apple and orange marmalade and boy do they make the meat delicious!

Now that is what I call good eatin'.
