Good evening/morning to all you MyLotters!
I just wanted to share my joy with you all. =)
My boyfriend and I just sat down to a lovely dinner prepared by myself.
It's a personal/family favourite and I'd love to know other people could enjoy it too=)
It only takes about 10 minutes, including preparation, with really simple, common ingredients, so it's great if you're in a hurry, or just hungry!
Not only that, it's a tasty meal for vegetarians/vegans, and can be easily adapted for omnivores with some chicken or beef strips!
Here it is:
It needs a name, doesn't it... Umm...
Garlic, Capsicum and Mushroom Noodles
Ingredients: (Serves 2-3)
200g Hokkien Egg Noodles
1 Red Capsicum
~150g Mushrooms
3 Gloves Garlic
1 egg (free range if possible)
Pinch Sea Salt
Ketchup Manis, Tamari and Sweet Chilli Sauce (Just a splash of each... Soy/Oyster sauces also work well)
2T Macadamia Oil (other oils can be used, but this heats well and has a nice flavour)
Method:
- Chop vegetables (or, as I often do, chop the capsicum first, and do the rest while it cooks)
- Heat oil in a pan, once bubbling, add capsicum and cook on a high temperature for 3-5 minutes
- Put noodles in a bowl of hot water for 2 minutes to separate, and strain.
- Once the capsicum is starting to char around the edges, add the garlic and mushrooms, along with the salt (this helps to dehydrate and release the juices from the mushrooms), sweat these for 2-4 minutes
- Push to one side of the pan, in the open space, crack your egg, breaking up the yolk in the pan (you could whisk it first, but this saves the trouble
), cook for a few seconds and flip. Lower heat and mix it around the vegetables.
- Now, add your sauces - approx 1 1/2T of each, and noodles, stir through for 1 minute or 2.
- Remove from heat and serve!
And there you have it - dinner!
(And if you're not big eaters, lunch for tomorrow as well!)

I tend to keep to simple meals as well. That's one of the drawbacks to alot of recipes is the long list of what goes in it and all the different steps. I found that the Taste of Home Quick Cooking magazines is really good.
I like to make BBQ Roasted Chicken and Potatoes. It's really simple. You put chicken pieces in a roaster or baking dish, add some chunk potatoes and then add a bottle of Kraft BBQ Sauce and then refill the bottle with water, give it a shake and pour it in. Cover and cook at 350 for about an a hour or two or until the chicken is done and the potatoes are tender.
Hubby loves it!! I've also made it using Pork Steaks and it turns out great as well.

Oh that sounds delicious!
I'd probably add a few other vegetables, because I just love them roasted =P
I realised after typing my recipe out that it did have a fair few steps, but I probably could have condensed them.
I might have to try your meal some time *mouth waters*.
It's especially great, since it's starting to get cold over here in Australia now.

Is 350 like 180ish Celsius?

You can put any veggie's in it you want...including chunks of onions...Hubby likes that too. I looked up the coversions for degrees to celsius and it is 176C Here is a link for you in case there are other recipes you need to convert...http://www.wbuf.noaa.gov/tempfc.htm
Our winter is just getting over so I'm looking forward to summer. I hope you enjoy the dish.

I would have put in some of the garlic with the Capisum so that the garlic could start cooking too and getting that flavour going. But its not too much of a difference. And breaking the egg in the pan is a bit better as you'll save one dish from clean up.

The first time I asked my mum how to cook it, I thought the same thing about the garlic, but she said to just do it like she does, and it does still have a heap of flavour.
We get organic, strong garlic, though, so I suppose that helps too =)
I just reheated the leftovers and am munching on it as I type.
It's so yum!
